Ingredients
1 sachet (7g) dry yeast
1 tbsp honey
300ml lukewarm water
250g whole wheat kernels
1 tsp salt
1 tbsp light olive oil
1 tsp lemon juice
olive oil spray
Method
1. Combine yeast, honey and water and set aside for 5 minutes.
2. Place wheat and salt into the Vita-Mix Dry Blade Container. Secure 2-part lid. Select VARIABLE, speed 1. Turn on the machine and quickly increase speed to 10, then to HIGH. Run machine for 1 minute. Do not over process. Remove 2-part lid and allow flour to cool down for 3-4 minutes.
3. Pour oil, lemon juice and yeast mixture into the hole of the flour in the Vita-Mix Dry Blade Container. Replace 2-part lid. Turn the machine on HIGH for 1 second. Remove lid to allow dough to rest. Meanwhile, lightly spray a 21cm x 11cm loaf pan with olive oil spray.
4. To knead the dough, two steps are required; Firstly, using a spatula, scrape down the sides of the container, pulling the dough away from the container sides and into the centre of the mixture. Secondly, with the switch on HIGH, quickly turn the machine ON and OFF five times.
5. Repeat step 4, five times or until dough binds together and is soft and elastic.
6. To remove the dough from the container, turn the machine ON and OFF five times to lift the dough up and away from the blades. Invert the container over the prepared pan and dough will fall into the pan. Use a wet spatula to remove any remaining dough in the container and to shape and smooth the top of the dough in the pan. Set pan aside for 15-20 minutes or until dough rises and reaches the top of the pan.
7. Bake at 180C for 35 minutes. Allow to cool for 5 minutes before inverting bread onto a cooling rack.
