Macadamia Nut Butter

All natural and 100 % good for you.  there are no excuses to buy store bought nut butters ever again.  Macadamia nuts make the most amazing butters because they are so deliciously creamy.  I use macadamia nut butter to replace traditional butter in a lot of my recipes which are a lot kinder to the heart.

What it’s good for

Use it to  replace traditional butter on your whole grain toast and cake recipes, make ice cream and healthy chocolate fudge.  It’s full of mono unsaturated fats, similar to olive oil that will help lower cholesterol and be kind to your heart and artieries.

Time it takes: 1 minute

Ingredients

450 g (3 cups) macadamia nuts

Pour macadamia nuts into your Vitamix container and replace the lid.

Select variable 1.

Turn your Vitamix on and quickly increase speed to variable 10 and then to, using the tamper to press the ingredients into the blades.

In less than a minute, you’ll have a lovely creamy butter as it moves freely through the blades.  Turn the machine off and remove the butter into a storage container to use when required.

Vitamix Tip

Use peanuts in place of macadamia nuts to make natural and healthy peanut butter.

Nut butters....Do we have to roast the nuts first to make a butter like paste...or add oil? I don't want to roast the nuts if possible

Raw nuts most certainly can be used to create nut butters. It is important to note however that the flavor of these nut butters will be substantially different than those created from roasted nuts. Raw nut butters will not be digested as well as roasted nut butters due to the enzyme inhibitors not being released via heat or soaking. One way to avoid this problem is to soak the nuts for 4-8 hours prior to processing. After soaking, the nuts may be dehydrated prior to processing as well. The oil content of nuts varies greatly so a bit of oil may be needed to obtain a smooth butter. Peanuts and Macadamia nuts process beautifully, however I suggest adding some oil to other harder nuts like Almonds.
